I am still waiting for cooler days but I don't know . . . the only changing leaves are the ones I saw on my houseplant this week : ( Anyway, in the hope of nice cool days I am posting a very favorite recipe for soup.

Potato Soup
7-8 medium potatoes peeled and diced
1 medium onion peeled and diced
1 stalk celery diced
chicken broth or chicken stock
1 pkg of cream cheese
1 can cream of chicken soup
bacon bits
shredded cheese
Peel and dice potatoes, onion, and celery.
Put in a 2 quart pot and add enough chicken broth to cover. Cook vegetables until done. Remove from heat.
In a separate bowl mix cream cheese and cream of chicken soup
Add cream mixture to soup. Stir until creamy.
Add bacon bits and shredded cheese if desired to individual bowl.
