Tempt My Tummy Tuesday

Why do bananas go from too green to too ripe over night?  Happens a lot at my house but it becomes a good thing when it comes to having banana bread.  I am always on the lookout for a good recipe.  I have discovered recipes that include pineapple make a good moist bread.  This last week I made 4 loaves from the following recipe and I think my search is truly over.  This is wonderful moist flavorful bread.  Try it out and let me know what you think.  I doubled the recipe to get 4 loaves and it worked well.

Pineapple Banana Nut Bread                                                      

3 c. flour
1 tsp. soda
1 c. nuts, chopped
1 tsp. cinnamon
2 c. mashed bananas (ripe)
1 (8 oz.) can pineapple, crushed & drained
2 tsp. vanilla
2 c. sugar
1 tsp. salt
3 eggs, beaten well
1 c. oil

Combine dry ingredients, stir in nuts, set aside. Combine remaining ingredients and add to dry mixture, stirring just until batter is moist. Spoon into two greased and floured loaf pans. Bake at 350 degrees for 1 hour and 5 minutes. Cool 10 minutes. Freezes well.

Yum...I love bread..and especially banana bread...a nice thick slice with a nice cup of sugared-up coffee :) :) :) reminds me, I need to make another batch of homemade bread in the bread machine. Any ideas on how to keep it soft after I've baked it? Love and hugs from Oregon, Heather :) :) :)

wow, I would never have thought of putting pineapple in banana nut bread! but it does sound delicious! I'm not much of a baker so I'll have to pass this recipe on to someone who might be kind to make me a loaf or two (LOL)
