Tempt Your Tummy Tuesday - Blueberry Muffins

Sharing a recipe today that I received from Prairie Flower Farm blog for blueberry muffins.  Precious Husband loves blueberries and quickly let me know these were "a keeper".  Along with a wonderful recipe please check out Linda's blog for a real treat that will encourage your heart for sure.

The Best Blueberry Muffins

1/3 c. oil
1 c. sugar
2 eggs
2 tsp. baking powder
1/2 c. milk
2 1/2 c. fresh or frozen blueberries
2 c. flour
1 tsp. vanilla
1/4 tsp. salt

Preheat oven to 375 degrees. Prepare muffin cups with paper cups or grease them. In medium sized bowl beat oil and sugar, then add eggs one at a time, beating after each addition. Beat in vanilla, baking powder, salt and then milk. Fold in flour, then blueberries. Spoon into muffin cups. Make the topping: I use my food processor. 1/2 cup flour, 1/3 cup sugar, 1/2 tea cinnamon and 3 tbl. soften butter. Blend until into crumbs. Sprinkle the top of each muffin with topping. Bake for 25 to 30 minutes.  Makes 18 muffins.
